I'm sure it would be Defense Against the Dark Arts. I mean, learn how to kick Voldemort's ass in some way. And learn how to protect me from mad wizards.
Transfiguration would be really cool too, I could be Jesus. Turn water in to wine and stuff ;) How amazing?
